Some of the best sushi in the valley! Huge selection of sushi with options for everyone’s tastes. This place is pretty hidden, and has a cool downstairs as well as a simple quiet ambiance inside. Service was decent but not amazing, and the price was just right. Presentation is where this shack stands out, they do an amazing job making their tasty rolls look like art. Definitely worth a second visit!

Sushi is usually really good! Service is also usually good! (The Downstairs bar is hit or miss)
My only problem with it is sometimes you can get decent sized rolls and other times it feels like you get shorted. Sometimes they will bring the food out on one plate and when they do that I feel like it is way smaller portion. The picture I have is around 65 dollars worth of sushi.

First time there and went on recommendation from a friend. Service started out really well and love the environment. Seaweed salad was amazing, probably the best I had although really small but it generally is and that’s OK.
First, got the mango dragon roll, which was pretty unsatisfying – lots of rice and only a tiny bit of fish on top for 15.50.
Asked for some recommendations for another roll that was “meater” but server never came back to actually get an order from me. I dropped my chopstick on the floor accidentally and asked for a new set.
Never returned, so I went to the bar, and the bartender seemed super annoyed that I asked for it. Never got other napkins either.
When the server finally came back to ask how I was doing, I asked for the check. Still hungry so going somewhere else to get another roll. Definitely won’t come back and do not recommend it.
Although, the atmosphere is amazing so if you wanna go there for some drink drinks and it’s attached to another restaurant with more fries and American type foods, so if you’re looking to go with your friends for a drink and maybe some fries that might be fun. But I wouldn’t go back for sushi.

Our server was absolutely fantastic. From the moment we were seated, they were friendly, attentive, and genuinely cared about making our experience great. He knew the menu well, made excellent recommendations, and checked in at just the right times without being intrusive. Drinks stayed full, food came out exactly as ordered, and everything felt smooth and well-paced.
What really stood out was his positive attitude and professionalism—it made the whole experience more enjoyable. This level of service is rare and very much appreciated. We’ll definitely be back and hope to be served by them again!

Best sushi in the valley by far, no other comparison. I have been to many sushi restaurants in ada and canyon county and sushi shack is the absolute best. The quality and high class variety of sushi is impressive. We also tried the genuine wasabi and black garlic and smoked soy sauces and very much enjoyed the wasabi. The blue fin was exceptional. We will definitely return. A little on the pricy side but worth every single penny and we got lots of food.

Sushi Shack doesn’t look like much from a distance in downtown Meridian. Just a sign on the corner with some visible outdoor seating. Inside is a clean, dark wooded, and comfortable restaurant.
The layout is a little strange for a restaurant, but it was nice to have option on seating location with a variety of views. We opted for turning left and selecting a table in the back.
Service here was excellent, with just the right amount of check-ins. They were polite and responsive to our needs.
The food was fantastic. We elected to have the Ika Salad to start. It was excellent. The best I’ve had. Subtle flavor and very cool and refreshing. For our dinner we opted for the Idaho Roll (obviously), the Heavy Metal roll, and the Islander Poke. It was the perfect amount of food for two. The rolls were delicious, but the favorite was the Islander Poke.
The presentation of the food was fantastic. Each rolls delicately prepared for maximum WOW! Here again, the Islander Poke took the victory. It looked spectacular.
We didn’t try any drinks or desert on this outing. We did not use the restroom either. Therefore we have no information on those items. We will update when we return.
Return trip, we got the Ika Salad and Islander Poke, again. However, this time we tried the Mainlander Poke, Mango Dango Roll, and the S&B Roll for dessert. Everything was delicious, service was excellent again, and we cannot recommend this restaurant enough.

The 100 year old building was a bonus and the bar was very cool. My drink “the Jewel” was awesome. We got a couple rolls and they were delicious. The wait staff were very friendly and helpful. A lovely evening and experience.
