After struggling to find a place for Valentine’s brunch, we decided to try Undefined — and we are so glad we did.
Mari, the manager, welcomed us with such warmth and professionalism. Maya, our server, was attentive, kind, and made us feel genuinely cared for. And Chef Chris? Absolutely incredible. The food was astronomical — beautifully presented, full of flavor, and clearly made with passion.
The service, the atmosphere, and the overall experience were magnificent from start to finish. I’ve visited many places in Hamilton, but this is one I would confidently say: go visit and be ready to be blown away.
If I could give 10 stars, I would — but 5 is all they allow. We will definitely be back!
The Barcelona fries were such a strong start, crispy and layered with saffron aioli, smoked red pepper, and almonds. A perfect mix of crunch, smoke, and creaminess.
The tartare was hand-cut Wagyu with rich mushroom aioli and crisp salt and vinegar chips, simple, elegant, and full of flavor.
For mains, the duck breast stood out, cooked perfectly pink with a sweet spiced glaze and a potato “makouda” on the side. The hanger steak came with charred greens and crispy polenta fries, bold flavor with a touch of chimichurri that tied it all together. The braised short ribs were tender and melt-in-your-mouth, served with bok choy and a deep shoyu glaze that made the whole dish comforting and balanced.
Service was friendly and relaxed, and everything felt thoughtful without being overdone.
Definitely one of my favorite meals in Hamilton so far. Already planning to come back.
We ordered to Undefined breakfasts. Eggs were done deliciously. The sourdough toast is not crunchy but soft and grilled. Bacon superb, potatoes were uneventful but what got us was the English banger. It tasted awful. We’ve had bangers before even in England but these just tasted, well, off. Slightly sour perhaps. We thought it was one and nope they both tasted off. We mentioned it to the server she said and offered up another strip of bacon instead. We were full so skipped the offer.
The only WOW we had was the homemade biscuits with butter and marmalade. Exceptional.
Otherwise for us it was not worth a $75 breakfast (tip on top of that).
My server, Taylor, was great: she said she was new, but to me she definitely looked and sounded like she knew her stuff. I feel like I ended my weekend on a high. I’ve already recommended this location to a couple of coworkers, and I told them they wouldn’t regret it. 10/10

They had $10 spritz specials for supercrawl weekend- my only comment would be tasted a bit too much club soda. Couldn’t taste the aperol.

The biscuit with strawberries and cream were awesome. The pork belly Benedict was way too fatty. The birria chilaquiles wasn’t that great
We were a party of 5 and everyone enjoyed their meals. Atmosphere is amazing, while it’s small inside you never felt crowded.
Food was fresh and delicious, from appetizers to dessert. Worth checking out.
