First time trying Cactus Blue. The restaurant has a comfortable and casual feel. Orders are placed at the counter and food is served to your table by the staff. The staff are wonderful and very helpful with fast service. We tried their chili with corn bread, fish tacos and enchiladas. The food was tasty and the portions are filling.

My family was traveling home from Lehigh and found this spot along our route. We are so glad we did! We had a delicious lunch and the restaurant was clean, cozy, and very comfortable. The server was exceptionally friendly and helpful. We all had excellent meals, and portions were large, we all took to go boxes as we couldn’t finish. I would highly recommend! Great authentic Mexican food.

This was for their Food truck at Beck Tree farms, it was juicy, fresh and flavorful! I went based off the great reviews of the their restaurant here –and now I want to make time to check out the brick and mortar because it was so good!
I think because there was lots of kids getting plain food and cheese quesadillas etc they kinda dialed down the heat across the board for everything so I’m assuming at the restaurant it’s more robust flavors, either way it still was tasty

Maritza Delicias is an absolute gem for a family lunch! From the moment we walked in, the upbeat atmosphere and warm, welcoming staff made us feel right at home. The menu offers a fantastic variety of authentic, flavorful dishes that impressed both the adults and the kids. Everything we ordered was fresh, beautifully presented, and served with a smile. It is rare to find a spot that balances high-quality food with such a relaxed, kid-friendly environment. If you are looking for a bright spot to enjoy a delicious midday meal, this is definitely it. Cactus Blue is part of my weekly rotation. They use superior ingredients and genuinely care about their customers. Their vibe is laid back and never rushed. Also, the staff is always friendly and accommodating. The only thing I don’t love is their Mexican rice because it lacks taste and texture. Everything else is muy bueno.

I have been missing them since they left Bethlehm and finally made the drive over to Emmaus to dine in. Different concept here with ordering at the counter and a more do it yourself feel, but the space is very inviting, food was delicious, good portion sizes, friendly staff. BYOB friendly. I’ll be back!

I had the delightful pleasure of having lunch at Cactus Blue yesterday. I was treated like royalty by the staff. Elizabeth Ortiz, Jonas, and Pete treated myself and everyone of their guests like family. The atmosphere is safe, loving, and warm. The decor is clean, casual, and whimsical. Most importantly the food was delicious. Cactus Blue combines fresh, high quality ingredients with absolute skill to create unique and beyond flavorful dishes. The prices are a steal for the portion sizes and quality you get. I cannot say enough kind words. Cactus Blue is my new favorite lunch spot.

Hidden gem. Absolutely fabulous. We were in the mood for good Mexican food and I found this after two swings and a miss.
Thank God we did. Great food and vibe. The delightful lady was a bonus she is a sweetheart. We will be back many times. Got fried ice cream to take home and it made it NP.
