Pavilion is an omakase experience from Chef-Owner and James Beard Semi-Finalist Nick Bognar. This menu highlights Nick’s unique expression through food, his Thai heritage, and 18 years of sushi chef experience. We are located in the backyard of our sister restaurant, Sado. One ticket includes 18 courses and the experience takes roughly three hours. 20% gratuity is also included in the ticket price, we have left the option to tip additional to account for any selected add-ons at the time of booking. Two dining styles are available for purchase, select either bar seats for the six person sushi bar, or dining room for a table. If only one of these is showing up, the other option is sold out for that seating.

This was the most exceptional meal that I have ever had. A truly special place, and after having omakase recently in New York City that was just okay by comparison, I was reminded of just how special my dinner at Pavilion was.

The restaurant is a single room located behind the main Sado restaurant. The menu is set, and you will be thankful that it is. Over three hours, I was treated to multiple different pieces of sushi, that were all different types of fish that were aged and sometimes even smoked in unique ways. The sushi chefs brought every single piece to you, and explained exactly what you were eating and how it was prepared, more than any other omakase restaurant that I have been to. I’m embarrassed to say that I started trying to eat the Nigiri in multiple bites (instead of one) because I wanted to enjoy the fish more than once! Each piece was a carefully crafted delicacy and above all was delicious beyond belief.

The cherry on top was the fantastic drinks, not necessary but definitely delicious.

I would fly back to St. Louis just to eat here again. In fact I will plan to. This restaurant will eventually by recognized by Michelin, of that I have no doubt.
