Dining at Pauline inside The Shelborne by Proper was easily one of our best meals during our stay.
From the moment we arrived, the service was outstanding. The welcome champagne and small bites set the tone immediately and made the experience feel elevated and memorable right from the start.
The menu is clearly chef-driven and thoughtfully curated. Every dish we tried was full of flavor and made with incredibly fresh ingredients. From the appetizers to the cocktails and even dessert, everything was beautifully presented and absolutely delicious.
The decor is elegant and sophisticated, with a vibe that feels very Miami Beach but with a refined twist. It creates a great atmosphere that feels both lively and intimate at the same time.
This is truly a perfect place for a celebration or special occasion, or simply a memorable night out while visiting Miami Beach.

The food was outstanding. The hearts of palm with truffle and mango were perfectly balanced and full of flavor, and the lobster sancocho was rich, comforting, and beautifully executed. And do not leave without trying the cinco conchas—they were absolutely amazing and a must-have. Every dish felt thoughtful and special. Pauline is a must-visit, and we’re already looking forward to coming back.
They also have really great vegetarian options (the hearts of palm entree was delicious) which can be hard to find at high end restaurants.

4 stars because of the hostesing and seating. If the restaurant is empty just seat people where they want to sit, and have a hostess at that host stand. Before us, there was a group waiting for a long time– missed opportunity.
