A Standout Dining Experience in Miami Beach
Dining at Pauline inside The Shelborne by Proper was easily one of our best meals during our stay.
From the moment we arrived, the service was outstanding. The welcome champagne and small bites set the tone immediately and made the experience feel elevated and memorable right from the start.
The menu is clearly chef-driven and thoughtfully curated. Every dish we tried was full of flavor and made with incredibly fresh ingredients. From the appetizers to the cocktails and even dessert, everything was beautifully presented and absolutely delicious.
The decor is elegant and sophisticated, with a vibe that feels very Miami Beach but with a refined twist. It creates a great atmosphere that feels both lively and intimate at the same time.
This is truly a perfect place for a celebration or special occasion, or simply a memorable night out while visiting Miami Beach.

We had a really lovely dinner here. All of the food was fantastic. We honestly couldn’t pick a favorite. The service was great and the drinks were also delicious. We really liked their High Note cocktail.
They also have really great vegetarian options (the hearts of palm entree was delicious) which can be hard to find at high end restaurants.

We happened upon this gem of a restaurant while walking up and down Collins, trying to find an upscale restaurant to celebrate a 50th birthday. It’s tucked away in the hotel, but the scavenger hunt is definitely worth it! The atmosphere was very peaceful. And the food (twists on regular) gave explosions of flavor with every bite!

Our dinner at Pauline was phenomenal! Our favourite dinner during our weekend in Miami. Highly recommend the zucchini blossoms and corn small plates. Truly stand out dishes. Service was awesome, very friendly and attentive. We were able to walk in on a Saturday without a reservation, but have a feeling that won’t be the case for long!

Probably one of the best meals I’ve had in the last year. I wish I would have taken more pictures to share. The atmosphere was elevated but not stuffy. The staff was very attentive without being intrusive. I can’t wait to go back when I’m traveling to Miami.

Came in for a quick bite and was amazed by the quality that I have to go back for a full dinner. The 5 conchas is a great raw sampler, the sauce for the shrimp really stands out. So did the zucchini dumpling, the creole sauce was a great accompaniment. As great as the food was the service really shined, Stephanie and Mark were friendly and helpful and the food runner described the food excellently. Highly recommend

The food at Pauline is excellent, it is honestly the best meal I’ve had in a very long time. The five fishes tasting was very yummy as well as the lobster, and the pompano fish! We were treated to an amuse bouche with fish eggs and the Johnny Cakes which were also very good. We decided to sit at the bar, and enjoyed the serve from Mark and the GM.
4 stars because of the hostesing and seating. If the restaurant is empty just seat people where they want to sit, and have a hostess at that host stand. Before us, there was a group waiting for a long time– missed opportunity.

We have a new favorite restaurant in Miami. We were blown away by the food and the service. Creative, delicious, well-plated, and timely. Lucas was a fantastic waiter. We got to sample five of the dishes on their menu, along with some unexpected treats for our Valentine’s Day meal. The mixology was at the same high level.
