The green chili is also some of the best in Colorado! it is not overcomplicated, simple, and perfectly executed.

I live in the neighborhood and have been meaning to come here for years. I fiiiiinally made it in today to grab some lunch to go, and ohhhh my goodness, it was delicious! One of the best pulled pork sandwiches I’ve ever had in my life. The tots (extra crispy) were perfectly seasoned and a nice touch as a side, and the mild bbq sauce was sweet and amazing.

I got there 5 minutes after they opened but a party of 10 or so beat me in, so I waited maybe 20 minutes for my food (which was no big deal, as I wasn’t in a rush). I had my 2 year old with me, so she did get a little antsy and started running around a bit. When we got our food, they had thrown in a chocolate chip cookie for the wait! What great customer service!

My mouth is watering thinking about this meal already and I can’t wait to go back.

Ordered the butter my ends and pulled pork. Sides potato salad and baked beans. Pulled pork very moist. Burnt ends were flavorful but a little mushy not enough crisp on the bark served naked (no sauce?!?), really just chunks of brisket not really burnt ends. Portions were a little light would have liked some more meat. Sides are good sized. Overall good bbq will be back.

Born and raised in the south and this was pretty good. The smoked chicken was a standout, the fried okra was surprisingly notable, and the brisket and pulled pork were good enough. Now, would slap 4 stars on the place, but they don’t have ONIONS. Absolutely bizarre, yall should absolutely have some sliced onions in the back, bbq not complete without onions.

Edit: always love a business reply, and I’d definitely have been thrilled if they chopped me up some onions. The (extremely nice) guy upfront seemed to think there weren’t onions in any capacity which I think lends to my incredulity, but I’m happy to revise to 4 stats because a Google reviews response always moves the needle a smidge.

Found this place by accident when we were on the other side of town from us. We have since made the drive back to take a friend.
Great food and super friendly service. The brisket was our favorite. Our friend had the Mac and cheese. I am not a big Mac and cheese fan, but I tried hers and it was so good!
Food was consistent in our visits. We will make a point to go again.

We have been to Rolling Smoke previously, and it was delicious. I am not sure what has happened since our last visit.

(We are smokers. We smoke our own meats and side dishes. We make our own bbq sauces. But sometimes, we want bbq and don’t want to have to make it ourselves, so we go out. )

I ordered burnt ends this visit. The only thing that maybe made these burnt ends was the fact that they were brisket and maybe cut from the point. They were not sauced, and I doubt they were double smoked. In fact, these seemed like they were just large chunks of brisket with nothing extra special done to them, which is opposite of what you’d expect for modern burnt ends.

When the manager (maybe owner) walked by and asked how our meal was, I politely asked “Are these burnt ends or just brisket chunks?” The reply was “Those are burnt ends. Nobody I know sauces their burnt ends. When we had the food truck we served them with sauce, but I don’t know anybody who sauces burnt ends. ” While ‘technically true for some rustic/old school burnt ends this is a lie that “nobody” sauces their burnt ends.

Uhm, what? I sat there in disbelief that 1 – The manager/owner just gaslit me when I had a concern and 2 – that someone in the bbq world “doesn’t know anyone who sauces their burnt ends”. Every place I’ve been that serves burnt ends serves them in bite size chunks, and sauces them. And I sauce and double smoke my own brisket. And I am fine with people doing burnt ends “old school style” (naked) but don’t tell me nobody sauces their burnt ends.

If the manager/owner had at least just owned it and said, “this is how we do our burnt ends” rather than try to dismiss my concern by literally gaslighting me I would be inclined to both have given a better review and return to his establishment. Not going to happen with that type of (lack of) service.

And don’t charge me nearly $4 extra for naked big chunks of brisket.

Update: My brother-in-law picked up a smoked turkey for Thanksgiving. It was one of the best turkeys we’ve had in a while! We also got some of their sides, and everything was delicious!

I came in with my husband for dinner for the first time and it was amazing. The brisket was tender, ribs were perfectly smoky, mac and cheese was really good, and the hot links had the perfect kick. Great BBQ!!

Golly… this was the dryest.. most awful bbq experience. Im pregnant and was so excited when I smelled it driving by. What a waste of $60… I wouldn’t recommend. We are from Texas and id sooner go to dickeys

Really some of the best BBQ I have had so far in Colorado. And the service was excellent. Brisket was smoked to perfection and flavorful. I also ordered the house made pickles which was a bonus in addition to flavor of my meal, I highly recommend this restaurant and appreciate the work that went in to the preparation of the meal that was enjoyed by this patron that is now a long term patron. Thank you,I really enjoyed my over all experience.
