During breakfast and lunch hours, Slope Room operates in a walk-up counter service capacity (no reservations) in coordination with Unravel Coffee, our farm-to-cup sustainable cafe which shares this space. We had a great experience at Slope Room in Vail. The space has a nice modern vibe and the service was solid, but the drinks were what really stood out. I had the Fiero Old Fashioned, their spin on a classic, and it was absolutely delicious. My wife ordered a cocktail with beets, vodka, and mezcal, and it was surprisingly incredible—very different, super well balanced, and something she really loved.

We started with the lamb lollipops, which came with a great spicy sauce and were cooked perfectly. I had the short ribs for my entrée, which were a very safe choice but executed extremely well—rich, flavorful, and incredibly satisfying. My wife went with the trout, which she enjoyed a lot; it was light, fresh, and paired really nicely with the cauliflower and celery. For dessert, we tried their marshmallow special, and trust me—if they recommend anything with marshmallow, listen. It’s delicious and an absolute must-try.

I’ve been coming to Vail for a long time. I’ve noticed that over time, only a few restaurants really stand out in terms of creativity, ambience, and service. Slope room will be a new favorite for us. From our greeting at the door and being able to be seated at a different table, even though they were busy the staff had us said hello. Our server could not have been more attentive and helpful as we made our selections. There was only one miss and that had nothing to do with the food… More about that at the end… Management hope you’re listening…

Let’s just say we could’ve ordered the entire menu… So we tried things that sounded a little different. We started with red kuri squash soup- which included whip tahina and sweet pickled raisins- what you say? I thought the same. Had to try it since it sounded so different and they were kind enough when we said we were splitting it to put it in two separate bowls with the same presentation. Absolutely delicious – the tahina was such a neat balance- so glad we tried it. We also had scallops and gnocchi topped with delicata squash and a caramelized milk powder and sage. This was definitely one of the top gnocchi I’ve ever had, including Italy. Great balance of texture and flavor. For dinner we had a bison steak with a side of horseradish sauce and the lamb chops. The elk loin was tender and flavorful… Not always easy for such a lean meat, and that lamb chops came with several sauces that were fun to dip in and slanted more toward Mediterranean. We also had a side of their mushrooms with miso and cabbage/ an absolute standout. Their brussels sprouts looked amazing as well, but we just had so much room to eat…

There was so much choice and we wound up at the end with an apple crisp where they poured a bourbon sauce over the ice cream. Really delicious so what’s the miss? I got lamb and I really wanted a red wine. So they had a Cliff Lede at $60 a glass. Now that wasn’t the one I would get -there was a different one I was looking at, but I thought to ask, do you keep these bottles in some sort of refrigerator with a temperature control- and the answer was no they are kept out on the bar. I have been to many restaurants in Texas and South Florida where heat is a problem and have seen a 12 bottle refrigerator on the bar counter to keep the bottle of wine at the appropriate temperature. Management if you’re listening -invest in one! They cost $1200 and worth it to keep your red wine at the appropriate temperature. You aren’t offering a $10 glass of wine that I’m willing to swirl an ice cube in to get it down by six or 7°. I figured anyone that carries Opus one should have a food and beverage manager that realizes red wine even at an hour on the counter will warm up too much. Sorry I know I’m picky. Everything else here was amazing.

While it overall looks very very stellar, all the food was good, not great. We couldn’t understand the waiter for a good bit and had to have them repeat multiple times. The lighting was way too too low, we’re in our late 20s and couldn’t read the menu. Service overall was great.

Cornbread was delicious, worth sharing with the table. The butter made it pop.

Cesar was disappointing, lots of mixture of greens almost like a garden salad, lots of fresh parmesan but the sauce was not only lacking in amount, but also in flavor of anchovies and creaminess.

Butternut squash soup was decadent, rich, and flavorful. Nothing super special. Over priced for a small bowl of soup.

The elk loin was perfectly cooked, had a decent salt level though slightly lacking. The presentation made this dish a 3.5/5. The peppers were not spicy so gave it a good char flavor to eat with the loin. Would suggest a sauce smear, or spreading the peppers. We were shocked when this hit the table, for $65.

The trout was delicious!! Perfectly deboned, great crispy on the skin while still flaky and buttery filet. Very fresh accoutrements. the sauce the sauce the sauce was absolutely amazingly paired. Very filling, but light!

The short rib was pull apart soft. Great portion size, sauce was delicious.

The mac and cheese is a MUST order. Great creaminess, truffle was not over powering. Big mac noodles.

The Yukon potatoes were delicious, surprisingly a slightly earthiness compared to regular mashed, loved the butteriness and absolutely smooth.

We had a lovely experience dining here. I ordered from the 3 course Fall menu and it was great. I had the tomatoes and burrata, trout for the second course and for the third course I got sorbet because I am gluten free. Overall our dining was wonderful. We loved our drinks and our server was very helpful.

Wow, this restaurant is great! The Chicories + Bleu salad is absolutely delicious with the bleu cheese créme bruleé, the pork chop done to perfection (although the lack of sides was disappointing), and the Pan Roasted Jidori Chicken was spectacular. Good, unique cocktails too.

The staff was friendly and we enjoyed the ambiance. Definitely our favorite restaurant in Vail!

Best food in Vail so far for us, even better than the institutional hot spot if you what I mean. Bison steak ; perfect charred, temperature and salt level. The mushroom and savoy cabbage side dish blow the roof off. Service is friendly, attentive but also relax and not stuffy. The dining room is beautiful. Hope to come back next time when in Vail.

The restraunt is located inside the hotel which is nice. We were a group of ten. We had drinks and appetizers. I feel like we had great service when we first got there then it got busy and we were on our own. I had to leave our table to find someone to bring salt and pepper. This is an expensive restaurant and the food was good not great. They boast about their steak but it is bland with no seasoning and not sure if they have a new person grilling steaks but they are not cooked properly. We asked for med and it was rare. Someone at our table asked for well done it was medium. We had to send it back 3 times. The waiter should have stood there when she cut through it the first time it was sent back. Instead we waited till he served others on the other side of the restaurant. He did take care of it at the end but this shouldn’t happen for an $78 steak. I don’t think I would spend the money here. There are so many good restaurants in Vail.

Great breakfast and solid service. Their breakfast burrito was a winner, thanks to the avocado sauce that was served with the wrap. Their espresso was also great, and their strawberry banana smoothie was nicely blended. The side of potatoes we ordered was a huge portion, and the sides of sausages were well cooked and seasoned. Their hot tea was also great. Great little eatery inside Gravity Haus.

The Slope has mountain ski vibe feel to it. We had the scallops for an appetizer, short ribs for dinner and the lemon pistachio dessert was AMAZING. Everything was amazing and the bartender who took care of us was very attentive and helpful. We enjoyed our conversation with him. I highly recommend The Slope!!
