You won’t find gourmet, tender, flavorful sandwiches like these, at this price, in all of Kitsap County, or even the state. We are very lucky to have access to food like this both as a sit-down restaurant, or pretty quick takeout! Chef Nicholas Ganea (unrelated to myself) is an understated culinary genius (Michelin star even).

We’ll be back!! I promise.

p.s. their fresh coleslaw has gotten quite good too! My mom really enjoyed it!

We enjoyed an exceptional dinner last night! Everything was well seasoned, perfectly cooked and plated with delicious accompaniments. We were impressed by hint of unexpected (but great) flavors each dish had.

We ordered the Leek and Potato Bisque and the Chicken Rillettes as starters, the Salmon and New York Steak as entrees and the Chocolate Cake for dessert. The soup was a stand out, as was the delicate but delectable chocolate cake.

*A note for steak fans, you don’t specify temp here, the chef prepares the steak one way. It came out medium which was perfect and tender. I’m normally a filet fan but this was one of the better NY steaks I’ve had.

It was very cool to chat with the chef and owners as they checked in throughout the meal. All the staff was attentive and personable. There is a robot waiter that helps deliver your food too, how fun!

We had also stopped in for lunch on Friday, that was great as well. We showed up towards the end of the lunch hours and they had 2 options left: Turkey Club and Beef Salami with Brie. I was not able to capture pics of these as we were both so hungry and scarfed them down right away! Both were delicious!

We will be back for sure, and looking forward to trying other items on the menu as they update throughout the seasons!

I always look forward to fine dining options. The lamb was paired well making it a good hearty comfort food. Dessert was delicious and the meringue had a good crunch. I like crunchy fluffy desserts. The resteraunt is still new and staff could improve on being more personable as well as chef introduction to the tables once things are hammered out and work flow is streamlined. I will be sending family to the bistro and will be looking forward to eating there again.

My daughter suggested this new place.
Quiet on a Thursday noon. Self service tablet at counter. Half dozen sandwiches. Made fresh to order.
I had the salami with brie cheese on a Fresh roll. Few too many jslepenos peppers, I took half off. This gave it a lite bite, not over wellming the salami and fresh bread. My wife had the corn mango relish with corned beef. Plesant food. A step up from subway.

What you’re dealing with here is fine dining cuisine in a crisp, clean and casual environment. Date night? Yup. Bring your kids? Why the heck not! You’re in for a treat either way. They’ll be open for lunch soon. Went for dinner. The vol au vent was authentic in every way (wild mushroom). The salmon was spectacular, with the large pearl couscous and lemon myrtle butter sauce. Steak with risotto was filling and cooked perfectly. Ordered every dessert. Loved the meringue with berries (and plum I think). If you like chocolate, the cake will satisfy. Chefs Nick and Tae have a great thing going. Don’t miss this place!

Grand slam at Sauce Nouvelle Bistro – you knocked our first visit outta the park! The food was incredible, especially the perfectly cooked salmon entree, flavorful mushroom puff pastry appetizer, and delicious chocolate cake with passion fruit. Plus a nice selection of beverages!
The staff were very hospitable and helpful. We love the loads of window light and warm wood decor. We cant wait to return soon!

It’s the kind of creation that tells you this chef isn’t just talented—he’s visionary. What was more impressive is that I wanted to try it, but I did not want for him to go out of his way. He not only made time to make it, he brought it to me personally. An experience I’ll never forget.

So far, the best restaurant in Poulsbo. You can really tell the food is made with dedication and love. We ordered several dishes — the salad was outstanding, and we also had a soup that was absolutely amazing. We tried the risotto as well, and it’s one of the best I’ve ever had. I will definitely be coming back because everything was delicious. The service was 10/10 — the waiter and the chef were both very kind.

Brother in Christ that was the best corned beef sandwich I’ve ever had. It’s not like I had low expectations, but I had the expectations that one would have for a corned beef sandwich, and this just blew it out of the park. It felt so intentionally crafted. Also, I’ve never once in life been this pleased to eat red cabbage from the little side salad. 10 out of 10 I have no notes.

This was my first visit. I will certainly be back.
