Gil’s Broiler claims to be San Marcos’ oldest restaurant and it’s an interesting combination of downtown diner-esque burger joint + bakery + ice cream shop + bar. Another airport-haircare-tire center type place. This was a coworker’s recommendation who hadn’t steered me wrong yet. But this one wasn’t a winner for me. (She earned a free pass since she’s given so many all-stars.) The Gila Monster burger comes with St. Louis dressing, tomato, and grilled onions. I’ve never heard of St. Louis dressing and it’s a little tangy for my taste but I didn’t hate it. The burger was flavorful and juicy so I wanted to love it but the combination of the St. Louis dressing and the strong charbroiled taste kept this one from being a strong contender. I’m giving it a B-. The homemade onion rings were good but nothing terribly special. I did, however, try a “Manske roll” and that was definitely the highlight. It’s like a cinnamon roll but with a buttery sauce instead of icing – freaking delicious. They did earn a few demerits when I figured out that they didn’t make any unsweet tea that day and I wonder if this is normal. There’s an urn for it and there’s table tents everywhere advertising Community tea – so I’m thinking someone got a little lazy but maybe there’s a good reason. Probably not. This is another one of those places that raises a lot of questions – does the restaurant close at some point and the bar/pool hall open? ♂️ Are the bakery goods sold all day? ♂️ Are burgers available all day? ♂️ I didn’t ask because the vibe was not welcoming of questions. You know the feeling. This was an interesting spot to try but I don’t have to go back. Cheers to Gil’s Broiler for serving up not-bad burgers and scrumptious Manske rolls for 100+ years!

I took my longtime favorite—the Manske roll—to go (actually four 4-packs… it’s a long drive ).
I ordered the CB with tots combo, and it was like stepping straight back into a great memory from years ago—comfort food done right.
I also noticed the expanded back area with a beer bar, two pool tables, and video-style machines, which adds a fun, relaxed vibe.
Always good.
I enjoyed their chili burger with some water water and loved their cinnamon roll (“manske roll”). I appreciate a place that seems to serve fast food but cares enough to only serve you your dessert at the end of your meal, when it can be perfectly warm.
Gil’s has several tables & booths under a wall of old photos of the city. Parking is available along nearby streets.
