I also tried the sourdough, which had a lovely depth of flavor from the koji miso and dried shiitake mushroom. The seaweed mixed into the dough was an interesting idea, though it might not be necessary since it can look a bit like mold and some people have seaweed allergies. Still, the bread itself was moist, chewy, and so flavorful that I enjoyed it on its own without any butter.
You can truly feel the care put into each loaf. Everything was genuinely delicious. Highly recommended.
Having been to the countries that use the same ingredients, walking in here is like walking into the warm embrace of a warm bath or functional alcohol problem.

**1 thing-the sesame panna cotta is perfect. Those hazelnuts on top are a distraction at best.
My personal favorite treat is the Miso Choco Walnut cookie, it’s dense and incredibly delicious. I appreciate that the prices include the boba, don’t miss out on the creamy Iced Coffee with honey boba! It’s the best I’ve had!

I chose a chocolate hazelnut cookie, and it was delicious. I’m not usually one for sweets, so a treat really has to blow me away for me to enjoy it—and this one did. Even better, the customer service here is probably the friendliest I have ever encountered. When I walked in, I was asked if I had ever been there before, and when I said no, I was immediately given a tour of all their offerings, as if I were a treasured guest. The hazelnut cookie spoke to me, and once I felt its heft, I was sold. A good choice. I can’t wait to try more.
True confession: Along with recommendations from friends who love this place, one reason I impulsively stopped in was because I wanted to see if they might collaborate with me. I have a small art side gig. Just minutes before, I had returned from a coffee shop that had displayed my charcoal and watercolor art for over a year—but had abruptly taken it all down without telling me. I only found out when I stopped in for a coffee this afternoon Since I had become very popular at the shop, you could say I was shocked—deeply disheartened and sad. I drove home with all my pieces sitting in the back seat.
So I pulled into The Foundry to try the bakery and to see if they might be interested in displaying some local art. I figured it was worth a shot, and in the worst-case scenario, I’d still walk away with a treat.
Even though I caught the owner completely off guard with my question, he immediately pivoted and asked to see my work. Conveniently, my entire gallery was in the back seat! I showed him a few pieces, and he chose one on the spot. As far as I could tell, I may be the first artist to ever inquire about displaying work in his adorable shop, but you’d never know it by how kindly and professionally I was treated. We even agreed to discuss displaying more pieces as I create them.
A bad afternoon turned completely around because of my impulsive decision to stop in. I’m so glad I did, and I will definitely be back to try their coffee drinks on my way to work. I know you’ll enjoy the experience too!
