This is a nice change to the food truck options for our area. They serve some nice asian dishes along with some American inspired fried seafood options as well. We got the veggie fried rice and it was very fresh and very good. Not oily and had a kind of sweet flavor to it. The rice was soft and moist. The eggrolls were so cute and very tasty as well. Go by and try some. They are going to start announcing daily specials on their website as well. We liked them, I would recommend giving them a try! Go get some!

EDIT: Finally got to try their food and overall it was good! Fair price. Good packaging for the pho. Nice quick service. Hope to see them out more consistently in the future.
I’ve been wanting to try Vy’s Kitchen, but unfortunately I haven’t had the chance yet. Their schedule is inconsistent and they rarely update their social media, which makes it difficult to know when and where to find them. They mention on their website that certain locations haven’t worked out, but it’s hard to see how any spot can do well without consistent hours and better communication. I understand staffing can be tough these days, but keeping people informed would go a long way.
