Ambiance and Service
The name “Chīmalmā” means “shield barrier,” symbolizing the restaurant’s role as a protector of great food and traditions. The tastefully done decor and welcoming bar create a warm and inviting atmosphere. The service was very attentive, and the extensive drink and food options are sure to satisfy any palate.
Food
Enmoladas: These are similar to enchiladas but with a mole sauce instead. Mole can be an acquired taste, but when done right, it’s a burst of flavor. This was exactly our experience here.
Torta Ahogada: Also known as the “drowned sandwich,” this dish features bread pre-dipped in a savory sauce and combined with a large burger-like sandwich. The sauce was a bit much for my taste, so I would ask for it on the side next time.
Barbacoa Taco: The unique tortilla flavor paired with the juicy, tender meat made this dish a standout.
Michelada: The michelada was excellent, featuring the classic mix of clamato juice, lime, and Tajín.
Overall Experience
Chimalma offers authentic food inspired by the Guadalajara region. If you’re in the mood for Tex-Mex, you might find a dish or two, but the true highlight here is the traditional Mexican cuisine and the drink offerings, such as their margaritas.

I tried the fideo and the tacos: mushroom, calabacita, and nopales. Each dish was tasty. I had a Chimalma cocktail which I enjoyed.
The quaint spot is perfect for brunch dates, dine alone, couples, small group of friends, or a stop while strolling downtown Dallas.
The waitstaff for the table was friendly and delightful to engage.
There is a small outdoor seating area with umbrellas for mild days.
There is a small parking lot and street parking.
The bathrooms were decent. Being low on staff may contribute to the fair consitions.
I will definitely return to try other menu items.

If you are extremely hungry and expect unlimited chips and salsa, this is not your place at all! It’s very bougie and modern twist to Mexican.
The food was delicious. Being a vegetarian, not much you can eat. I would have never tried anything with pineapple, but my tacos were great once I added the sauces from my trio. They give you complimentary soup with your meal.
Portions are small for the price if you are hungry! Our tour lady across the street told us about the best coleslaw in town…it was marinated cabbage..not the best.
If you want different then this is your place. If you want portions and typical then find somewhere else to eat.
Restaurant and restrooms were clean, waitress was sweet, and the food arrived quickly.
Our smiling and genuinely happy waiter, Alvero, was top notch.
The Verde sauce was warmed, the purple corn tortillas delicious, and the cabbage, lime, cilantro, and pickled onion was a delicious compliment to the perfectly prepared Carnitas.
I their lighted sign, “Eat Tacos live forever” is not only a fun message, I’d say this place embodies both…the tacos, and a positive and upbeat vibe that’s certain to extend your life even for just another day.
