Trilogy Coffee Roasting Co. is a family-owned coffee company established in 2014 with a cafe and roasting facility in Downtown DeLand, Florida. We roast seasonal, specialty grade coffee which is available in our cafe by the bag and by the cup. Brewing options include espresso, classic drip coffee, pour overs, and cold brew and nitro cold brew coffee on tap. Available food items include fresh baked pastries, breakfast sandwiches, avocado toast, fresh fruit and gourmet oatmeal by Anson Mills. And if you’re looking for something other than coffee we have a selection of hot and iced teas, matcha, chai and hot chocolate with our house made mocha. Plus frozen pops from our friends at The Hyppo in St. Augustine. We look forward to serving you!

What great coffee in a coffee shop. Decor wasn’t a wow factor by no means (very plain) but coffee is amazing! Staff were super nice and friendly. Didn’t have any food to rate at this time but I will definitely be back.

Best cortado I’ve ever had. I got the seasonal ube purple eater (weird name but killer cortado). It was so creamy–even the milk float was creamy! The added fact that they have the option of serving in mugs and glassware is so underappreciated. PLUS they have outdoor seating that is mostly separated from cars and moving traffic, again, such a necessity and bonus. Really recommend this place for the coffee, because it welcomes you to stay and draw/chat/pass time.

Trilogy has the best coffee in, and out of, Deland. The food is good as well and the tarts are delicious. You’d be hard pressed to find anything like it in the surrounding states. I realize that is a very bold and unbelievable statement but just go and see for yourself.
The staff is one of a kind and regardless of any new baristas that came in or have left over the last couple of years, they have been most consistent. I could name every barista and what they excel at but they are all S-Tier. They are extremely kind and friendly, if you’re a regular they will know your names and your orders. It always is an amazing experience to go to Trilogy, we love this place.

This is our favorite coffee shop in central Florida.
I prefer pour over coffee and they have a great selection, and it is always great quality. We also enjoy the cold brew, and my children love the cold tea, with honey added of course!
The customer service is exceptional and only gets better if you become a regular!
The shop has seating inside and outside, so if you can’t find a seat inside, we always find one outside.
It can get really busy but the staff is very efficient so don’t worry if there is a line when you arrive.
The location is great too, you can find free parking in 3 different lots around the shop.

Really cute coffee shop on a quiet street. There were unique coffee offerings from various regions. There was also options for dairy free milk.
There’s a small food menu but both items we got were delicious! You can add an egg to the avocado toast. I felt the avocado could’ve been seasoned a little more as it lacked flavour but the bread was delicious. I subbed out the cheese on the breakfast sandwich for tomatoes and I really enjoyed it.
I highly recommend coming here for the coffee, food, and vibes.

Cute local coffee shop. Service the first time I tried here wasn’t phenomenal but the coffee and cheddar scallion scone were delicious so I gave it another try and the staff were so kind and attentive. Glad I gave it another try. Definitely recommend for good coffee, good vibes, and something local.
