Oklahoma native here, brisket is my go to, and the brisket here among the best I’ve ever had. Though they make all their BBQ sauces in house and they’re all delicious…it needs nothing! Just order more than you think you’ll want…because you’ll want more.
We got the trinity trio with a few sides, all of which was bomb but the street corn was my favorite. The peach cobbler I had was amazing as well.
10/10 recommend to anyone who appreciates the art of grilling meats, great food and/or vegans looking for a proper welcome back to real food.

We took advantage of their Thanksgiving catered meal for the family and it was outstanding. The turkey was moist, smokey, and delicious. The sausages, brisket were packed with flavor. All four sides crushed it: Burt end beans, coleslaw, Mexican corn, and jalapeños grits all killed it. This will be a family tradition for a very long time. Do yourself a favor and hit these guys up.

I had a chopped beef sandwich. The barbecue itself was quite good. (I’m from Central, Texas, and I know my barbecue).
My issue was the portion size. It was the smallest chopped beef I’ve ever been served ,perhaps since the elementary school cafeteria.I certainly could’ve eaten a second one easily, but at that price I don’t think so.
My other “beef” was that the woman who evidently is the owner was quite sour and unpleasant.
Again, I’m from Texas, so maybe I expect the person running the place I’m eating to at least be Semi friendly.

Amazing bbq, and pickles! We got a couple lbs of meat and sides to take up to our cabin while we were in the area skiing. Delicious! The service was great and the bbq sauces were so yummy. ◡̈

The brisket is amazing but the beef ribs were truly transcendent. We were there the week of July 4 which is a busy time for the area, so we came early and also preordered the ribs since they only do them on Sundays. The sides were so unique and delicious – the pickles, the slaw, the CHARRO BEANS. Y’all I don’t usually go crazy for beans but these were made with burnt ends and could be a meal by themselves. The Mexican street corn was also a favorite. Plan to go here more than once, pick it up after a river day and take a nap after. Heaven.

This a new spot without a bunch of reviews, don’t let that stop you from coming in! They have exceptional customer service, great views with amazing prices and the FOOD IS AMAZING! We are from Oklahoma City here on a ski trip and next time we are in Pagosa this place is on the top of our list to come back to. They made us feel right at home, thank you for the great meal, tasty drinks and desert too. I can’t wait to return. Come check them out, I promise you won’t be disappointed.

The view from the restaurant is the best in Pagosa Springs.
Get there early the food is so good they sell out fast.

Incredible French Dip sandwich blew me away! The au jus is so delicious that I took the rest home and the green Chile horseradish sauce was perfect. I will definitely be eating this frequently. Also, the chopped brisket sandwich is to die for. I will come back for the beef rib someday, it looks very decadent. The huge deck area has officially opened and the view is breathtaking, especially at sunset. You should come eat here, definitely!!!!

We ordered for a party of 20+ to go. We had pulled pork, baked beans, and the slaw. Everyone enjoyed it and the food is excellent! They provided us with plenty of buns, pickles (so tasty), sauce (would love to see them create a spicy sauce as well), and eating utensils. Everyone that helped us, from the young lady that took our order to the two gentlemen that helped us at pick up time were very helpful and friendly (my apologies for not remembering names).
I highly recommend Square Top and will go back next time we are in Pagosa Springs!

Everything was top notch! I was skeptical before we went but once the food arrived that disappeared. The food was amazing! And that BBQ sauce, ! The best BBQ I have had in CO so far. The service was very friendly and had a good laid back atmosphere. We sat outside and enjoyed the nice weather and beautiful view. Would definitely recommend stopping here!!!
