Absolutely excellent Mexican food. Server was friendly and food is not very expensive. Server forgot to refill my drink but was quick to fix the issue and ended up not charging me for the drink. Would come back, and is a great spot for anyone into Mexican food.

Of all the Mexican restaurants that I’ve been to this is the best and I’ve been to all of them in northern Colorado. My wife and I stopped by for lunch. They have a separate lunch menu you get free chips and dip. There are three kinds of dip. We had an appetizer that was a spinach and artichoke with chorizo on the top. and housemaid chips, they came out a hot black skillet and it was the best! I had a burrito that was a spiced ground beef with deluxe toppings, and the spicy sauce. Also, I asked for their house made habanero sauce. It not only was a little hot, but the taste was fantastic. My wife got the Mexican hashbrowns potatoes, all the veggies and scrambled eggs. She said it was the best and had plenty to even take home for tomorrow’s breakfast. Not only was the food good the atmosphere was fantastic with lots of decorations. The owner was also our waiter and was very very friendly and accommodating. I highly recommend this Mexican restaurant to anyone who likes to try something a little bit different. I might also add that their margaritas are equally as good as their food. We will definitely be back more than just a few times.

Four of us rolled in for lunch hungry and left plotting our next visit, which feels like the clearest sign a place is doing it right. We started with the chorizo and the artichoke dip, but the real opening act was the chips. Warm, thick, and dangerously snackable, they came with refried beans plus green and red salsas that somehow made “just one more” feel like a reasonable life choice. The fact that they’ll happily refill the chips is both generous and, frankly, a little reckless in the best way.
From there we went all in: el pastor enchiladas, carnitas with ribs, a Cali burrito, and the Chelos burrito. Every plate showed up like it had something to prove, and then proved it. Everything was genuinely delicious, and it was the kind of lunch where the table goes quiet for a second because everyone is too busy being happy.
The staff made the whole experience even better. Friendly, helpful, and on top of things without hovering, which is a skill that deserves its own tip line. The space is inviting, and we got a bit of bonus entertainment watching a bull statue get delivered, which is not your average midday meal. We were seated by the street-side windows, and with the snow falling outside, it added this cozy, almost cinematic vibe that made lunch feel like a little occasion.
My only nitpick is an easy fix: the table and chairs we had rocked enough to feel like we were dining on a gentle tide. A quick balancing would go a long way. Beyond that, this place is a win, and I’m genuinely excited to support a new local restaurant in Timnath that’s already getting so much right

Chelo’s Mexican just opened a few weeks ago and they absolutely nailed it. The inside is super comfy and the vibe is poppin without feeling over the top. Great bar setup and the service is top notch from the moment you sit down.

I went with the street tacos and did one shrimp and two al pastor. One of the tacos had the cheese crust add on and that was a game changer. Crispy cheesy goodness that takes it to another level. Pro tip go with the flour tortillas. They are amazing and make the tacos even better.
If you are looking for great food solid drinks and a fun welcoming atmosphere Chelo’s is a must visit. We will definitely be back.

Chicken fajitas with the soft , tasty and chewy flour tortillas… finally a place that gets the flour tortillas right. Salsas are fresh and their habanero salsa is great. Taco salad was good and their arrechera tacos…. dang… just tasty… I got them with flour tortillas and the melted cheese. The meat is perfect…

Absolutely DELICIOUS food and a wonderful experience! Our food was seasoned perfectly and tasted incredible. Our server Hugo was super welcoming and made us feel like family. The atmosphere is somewhat modern, but it still feels homey.
