This place has a great work of people. The service is quick and they keep up with no matter the amount of food thrown at them. They are excellent for only being opened for a YEAR. Service was great but the food needs just a few adjustments:
The chashu was not braised long enough and was slightly firm to the bite. Another 20 minutes of braise time would’ve been ideal. The broth was salty, and didn’t have the richness/unctuousness that comes from bone stock. The egg was slightly overcooked, maybe by less than a minute. I might’ve just caught them on a bad day (I also came to eat right at the opening time) but these are small adjustments and they are so close to having a great bowl of ramen.
I also had gyoza which could’ve used another minute on the plancha.
