PIZZA NOTA

Inspired by New Haven’s iconic char. Thin crust pies baked hot and fast in our coal-fired oven, finished with a touch of New York attitude.

Got the classic cheese from Pizza Nota and it was excellent. The crust had a great crisp with just the right amount of char, thin but not flimsy. It held up well and had that nice crunch on the first bite.

The sauce had really good flavor and wasn’t too sweet. The cheese was melted perfectly and balanced with the sauce so nothing overpowered anything else. You can tell they use quality ingredients.

It’s a simple pie, but they do it right. Definitely one of the better classic slices I’ve had in Rochester. I’ll be back to try more.

Stop what you’re doing. Pick up your phone and order a pizza from this place. It is astonishingly good. It’s a very authentic New Haven style pizza, so. It’s thin, with a very crunchy crust and very dark browning. Very far from the typical Rochester pie. The quality of the flavors, ingredients, and technique is really something. We’re very lucky to have this.

If pizza could earn a PhD, Pizza Nota would be defending its dissertation—and absolutely embarrassing the committee. But just when you think this is a one-trick pizza genius, Pizza Nota casually reveals they’re just great at everything else too?? Including hospitality & atmosphere.

The New Haven–style pizza is the star: thin, charred, crackly crust with that perfect smoky kiss, balanced sauce, and toppings placed with monk-like discipline. Try the Tomato Pie, it truly highlights how incredible their ingredients are— can’t hide behind cheese with a tomato pie! One bite and you’re questioning every pizza choice you’ve ever made. Pizza Nota is the new way.

Then come the cutlets, refusing to be background players. Three ways, no wrong answers:

Naked: crispy, golden, flawless. Freshly grated cheese & lemon zest. Chefs kiss.
Parm: saucy, cheesy, emotionally supportive.
Drunken style: drenched in rich, velvety vodka sauce—risky, frisky, and unforgettable.

The salads and sandwiches are a real surprise flex. Built on in-house bread that’s pillowy, flavorful, and strong enough to handle serious fillings. These are not “just in case” menu items—they’re must-orders. I usually don’t order salads, or eat them for that matter. They take up valuable real estate on my plate that should be for pizza. At Pizza Nota, the salads have earned a place on my plate.

The vibe is dialed in. Inside, a big statement pizza oven, exposed brick, and just the right amount of Rochester grit make it feel cool and welcoming without trying too hard. Really cool logo with a twist on the Roc flower and a really cool Sinatra mural. When the weather’s right, the outdoor space is going to be prime real estate— plenty of room for activities! Maybe even cornhole!?

Most importantly, you can feel the passion of the Pizza Nota team, specifically resonating out of the kitchen. There’s pride, hustle, and real care behind every plate, and it shows in every bite. Shout out to Rick, Anto & the crew.

Pizza Nota is everything a pizza joint should be.

Rochester, we’re lucky. Thank you Pizza Nota.

Absolutely amazing! We went for the soft launch and were blown away! The pizza is delicious and has the perfect crisp & char! The sauce paired perfectly with the toppings and crust! Highly highly recommend the Drunken Chicken cutlets! They were fantastic! Never had chicken this good in my life! Breading was crispy and flavorful. The vodka sauce was amazing! I would come here just for the chicken it was that good! Awesome space inside! Great addition to the area! Can’t wait to go back again!

Great pizza and an awesome addition to the neighborhood. They’re still starting, so had to order ahead and some items sold through. Had some reach out when something I ordered was no longer available, and I will say the staff is awesome in responding. I am happy to come and support them, the food was great and I respect their hardwork.

The BEST pizza in Rochester, period! The aesthetic is *so* cool – and the Pizza is exactly what you’re looking for! It’s elevated but accessible, THEIR pizza beats the best that New Haven, New York, and New Jersey have to offer.
Their menu of cutlets, salads, and the signature meatball are all to die for. I can’t wait to go back!!
The staff are attentive and courteous and spending even a moment to observe the open kitchen you can tell they care about (and are masters of) their craft. Rochester’s best pizza!!

As someone with family in New Haven, we had to try this new place out! We ordered a classic cheese and the Brooklyn Serenade. Both had great flavor and we loved the combination of Stracciatella, pepperoni and hot honey on the Brooklyn pie! While the crust has that New Haven thinness and char that we love, we did think it was a little dry (not quite as chewy as we’re used to) and could likely use more salt in the dough. Otherwise though, these are excellent pizzas and rival Peels on Wheels to be the best in Rochester. Excited to be able to sit down in restaurant and enjoy these pies hot and hoping they add some more New Haven toppings like a white clam and our favorite, bacon!

They absolutely crushed the New Haven-style crust! The New Haven Tomato Pie is perfect in its simplicity, and the cup and char was also fantastic. Can’t wait to try the rest of the menu!
