I researched the best restaurants in Wailea before our trip, and dining at Ko turned out to be one of the most special and memorable experiences of our stay.

We were seated at an exceptional table overlooking the adults-only pool. As evening fell and the tiki torches were lit, the view over the water was quietly magical.

Our server, Connie, was genuinely warm and welcoming. She surprised us with a Happy Anniversary card featuring a painting of the hotel, signed by 30 Ko staff members. Each signature was done with care and personality—one even whimsically shaped like a cat. I loved it so much that I have the card hanging in my home.

Connie explained the menu clearly and thoughtfully, including several items we hadn’t encountered before. We started with the venison lumpia, an elevated take on a spring roll, and shared the wagyu lettuce wraps. Sharing was the right choice—the dish came with four types of lettuce, yuzu leaves, fern greens, a rectangular pan of rice, and more than enough beautifully prepared wagyu for two. Earlier in the week, a guest I met at a lei-making class mentioned she had ordered the wagyu steak at Ko twice. I understand why.

For dessert, the strawberry—shaped like an actual strawberry—was both beautiful and inventive, light rather than heavy, and a perfect ending.

Peni, the manager, also stopped by our table to say hello, which added another thoughtful touch to the evening.

Thank you to everyone at Ko who made this dinner so memorable. It remains one of my happiest travel memories and truly lives in my heart.

Had dinner at Ko with some of my golf friends. The food was fantastic. The atmosphere was great. Hands down the best service we experienced on the island. The head chef came to our table and greeted us. The manager was also very hospitable. Over all a great experience. The Stawberry Ice Cake was to die for.

Such a wonderful dining experience at Kō Restaurant! The new menu was excellent and so beautifully executed.

Some of our favorites were the wagyu beef fried rice and steamed opakapaka with the tempura lobster tail. Both dishes were absolutely delicious and cooked perfectly.

Morgan was our server and she was so wonderful! Attentive, kind, and truly made the evening feel special. We felt so well taken care of.

Two of us dined at Kō mid-week with a 7:15 p.m. reservation—the stunning Fairmont Kea Lani setting and elegant ambiance immediately impressed.

Our server Drew was outstanding, offering spot-on recommendations and swift service; the whole staff shone. We started with the charred inasal chicken skewers, binchotan grilled octopus, and pomegranate char siu lamb ribs—the octopus stood out as exceptional, while the others were solid but not mind-blowing. For mains, the Pop’s Hawaiian-style beef cheek and poi stew delivered deep, incredible flavors (pro tip: dip the house-baked sweet rolls in that sauce), but the katsu-style ahi tuna felt bland even with the accompanying sauce.

Fantastic for a special evening out; I’d return for the beef cheek and top-notch vibe alone.

Kō delivers an amazing mix of service, setting, and menu focus. The open-air layout offers a comfortable upscale vibe. Staff ( Bryan and Peni ) were friendly, attentive, and perfect for the evening – would highly recommend! The menu reflects local ingredients, with thoughtful updates from Chef Matt. We got to try a lot of the menu and I was stuffed.

Good accessibility, suitable for small and large groups. Expect $50–100 per person. Great for locals hosting guests or celebrating special occasions. They offer Kamaʻāina which is rare to find at such a high end restaurant!

I did tons of research on Maui’s fine dining scene, but the best meal of our trip happened by chance at Kō. We decided to go on a whim since we were staying at the hotel, and it exceeded every expectation. Misty provided excellent service, and the food was incredible—specifically the fried chicken (rivals anything I’ve had in the South) and the mind-blowing Filipino milk bread dessert.

The food was unbelievably good — truly next level. The wagyu and the beef cheek were jaw-dropping. The only downside was the service; the servers didn’t match the quality of the food, and that’s the reason for the four stars instead of five. Still a fantastic dining experience overall.

Chef Matt De La Cruz (no relation ) hit a home run with new menu that’s very delicious and is connective with Hawaii and its fruits and bounty. Delicious steamed fish, wagyu steak and an unbelievably delicate strawberry ice dessert to end the meal. Their Mai Tai was different and strong, and was served in a tall glass. The table setting upon arrival has a lovely wooden table setting that focuses on the Valley Isle. I have a total yearn to return to Ko!
