It’s humble beginnings for what appears to be a family-operated business. I’ve tried them twice now–once for fried whiting and recently for ribs and rib tips. While they are successful in getting their ribs tender, the outside taste like chips or sawdust from hardwoods such as hickory or mesquite that is burned at high temperatures–perhaps from liquid smoke. It’s a bit overwhelming for me as it does not allow you to taste the rib meat and leaves a graininess in my mouth. The meat inside is tender but is borderline of being stringy. The sides that I had were the jambalaya rice and baked beans. I sampled the potato salad. The rice tasted like it came straight from a box of Zatarain’s jambalaya rice with some internal tweaks. The baked beans was a version of the South Louisiana baked beans. It tasted if elements were missing such as the sweet ingredients to balance the tangy taste. The potato salad was just not good–dry cubed potatoes and overpowered with mustard. The fried fish was decent. This is one of the reasons why I’m giving them 3 stars. The other two stars are for effort and the kindness they show.
Now for service…the workers move very slow. So, if you are in a hurry, by-pass this place. There seem to be a lack of experience on the back and front lines. The back line takes forever to read food order slips to prepare the order and the front line seems to be apprehensive in scooping the right amount for the sides. And, please don’t have (what seems to be) the owner on the back line. He seems to bring more confusion to the ordering process. He hollers back and forth to the cashier trying to understand the food ticket –all while greeting people coming in.
Conclusion: I like that they have launched one of their dreams and are going for it. I have hopes for this restaurant to be successful and want to support them. However, they’ll need to do a few things: (1) consult with someone about the rub for their ribs, (2) improve their sides, and (3) work out a process where customers are taken care of within two to three minutes.

Great food and friendly service. The meat fell off the ribs and the sides were delicious. The weather was beautiful (finally) and we had a pleasant lunch outside.
