This place is an experience (and the price reflects that, so do be prepared). I had poked my head in a couple of times, hoping to eat here, and there had been no room. This time, there was, and what an experience. We started out by ordering some sake and fried rice, but wound up settling in for the Omakase menu. It was fantastic. We had a wonderful time talking to the chefs, who put together more than a dozen dishes for us over the course of an hour. Each bite was totally customized to the ultimate degree, with special salts and vinegars, presentation and finishes. I especially enjoyed how the chefs toyed with myself and my dinner partner – serving us things we weren’t sure about in presentations they were certain we’d enjoy, or giving us riffs on previous favorite ingredients later in the meal. That being said, I do wish we had the ability to request a few specific preparations, or repeats of favorites, when something was particularly wonderful. I left with an incredible memory, but zero knowledge of the new things I had come to enjoy. The only sad part is not being able to replicate any part of this meal again in the future.

Fantastic Omakase-only sushi restaurant tucked away in downtown Bozeman, bar seating only. (for folks complaining about lack of customer control on the menu items, please Google the 2nd word in this review)

The staff at The Sashimi Bar know what they’re doing and put out some incredible flavors. Save your visit for a special occasion, make a reservation, show up on time, and be ready to slow down and appreciate this top-notch dining experience.

Best dining experience ever!! These guys know what they’re doing! If you haven’t been to this gem of a sushi bar you’re missing out. Being raised a coastal Californian this place raises my bar. It’s intimate, personal and absolutely delicious. Freshest of fish with a variety u certainly won’t find anywhere else. However if you are picky and rude I suggest not wasting the seats at the bar there are too many of us waiting to enjoy the best sushi in town!! Cheers!!

Ok, so I rated these guys one star cause everyone reads the one star review to see what’s wrong with a place. Here’s what’s wrong with this place.. it will ruin what you thought great sushi was. Paul and Lance are masters of their culinary craft. If you haven’t been, you’re missing out on the best sushi, bar/ punk rock/ Picasso/ karaoke experience ever. Really worth the wait, even if you’ve waited a lifetime. Once you come through the doors, you will have entered a place where “typical” is forgotten, and magic is made one bite at a time. Hands down, the absolute best restaurant in town! Talk about great staff by the way, everyone who works there, loves to be there, and that says a lot about the kind of environment that this establishment is! Very impressed!

I’ve traveled the world and have eaten all the food, but even that snobby statement falls flat here. The only thing better than the food is the experience, and both of these are trumped by the service. These folks don’t just know their craft, they love it. The experience here wasn’t just delicious, it was fun and welcoming. Mixing high class service and old Bozeman manners, Paul and Lance aren’t just artisans, they are awesome guys who just happen to serve the best sushi of your life. The only thing that one-up’d the dynamic duo was the rest of the staff. I wish I could rate higher. Thank you everyone there for one of the most memorable evenings we will ever have.

This place is unbelievable. Absolutely the best sushi in Bozeman and beyond. The fish is fresh, prepared and cut perfectly with so much love and attention, and the staff is out of this world. We are so lucky to have a restaurant like this in town. Every piece of fish is a different experience. If you want to have your mind blown, you have to check it out.

I may be the worlds’ biggest skeptic – no meal can be worth $100+ dollars – This one is. This isn’t a meal, it’s an experience; one that should not be missed. Paul and Lance are some really cool dudes who have mastered a rare craft; rare in America at least. I don’t know if I’ll ever be able to eat sushi in another restaurant. Sushi, to me, is a hunk of fish, rice, and veggies, rolled and tucked and served in some fashion which requires a bath of soy sauce and wasabi to be enjoyed with any flavor. I used ZERO soy and wasabi at the Sashimi bar! Each cut is prepared and served to you with the absolute perfect dressing and needs nothing else. I was truly stunned at how magnificent everything was. Not only that, but the cocktails were pristine as well.

It’s a very expensive dining experience, but worth every cent and should not be missed. Grateful to Paul and Lance for sharing their gifts with this community.

Words cannot describe how much I enjoy this place. It’s like a mystical realm of fish excellence that you’d expect literally anywhere but Montana. Somehow it ended up here though, and I cannot be happier.

The food? Excellent. Creative, stylish, and tastier than anything you’d expect.

The staff? Super friendly and willing to go above and beyond to make sure you have a great evening.

The environment? Best restaurant in Bozeman, no contest, not even close.

The Omakase experience might not seem to be for everyone, given the lack of choice. However, I guarantee everything is well thought out and there are a la carte options if you prefer. The shrimp fried rice is divine.

Seriously, try it.
